To make French fries, fresh potatoes are typically peeled (though they can be left with skins for a more rustic version) and cut into thin strips, often about 1/4 inch thick. The fries are then soaked in cold water to remove excess starch, which helps them achieve a crispier texture when fried. After soaking, they are fried in hot oil, usually at a temperature of around 350°F (175°C). To achieve extra crunch, some people fry the fries twice: once at a lower temperature to cook them through, and then again at a higher temperature for a crispy outer layer.
